Yummie coconut dessert

Coconut chocolate cake

260 g ground almonds

40 g ground coconut

125 g cane sugar

70 g cocoa powder

1/2 ts (glutenfree) baking soda

250 ml Alpro coconut drink

2 eggs

1 orange

2 tbs shredded coconut for garnish


1. Preheat the oven to 180° C degrees. Mix the dry ingredients in a large bowl. Stir with a whisk to remove clots. Separate the eggs and add the egg yolks with the Alpro coconut drink one by one with the dry ingredients. Mix until smooth.
2. Beat the egg whites until stiff and fold them gently into the batter until you have a wet dough. Take a greased baking pan (or use parchment paper) and pour the batter into it.
3 .Bake for 30 to 35 minutes. After 30 minutes of baking the inside remains creamy, if you bake a little longer, the cake will be drier.
4. Grate the peel of an orange. Remove the chocolate cake from the oven and let it cool down before cutting. Cut the cake into equal pieces and arrange on a plate with orange zest and coconut flakes.
