1. Preheat the oven to 180° C. Mix the Alpro Coconut, cornflour and maple syrup in a saucepan over a low heat. Stir until it thickens; about 2 to 3 minutes. Remove from the heat.
2. Remove the seeds from the vanilla pod. Add the vanilla seeds, salt and desiccated coconut to the mixture in the saucepan. Stir until well blended.
3. Put a tablespoon of the coconut mixture on a baking tray lined with greaseproof paper and sprinkle over some extra desiccated coconut.
4. Bake for 10 to 15 minutes or until golden brown.
