Soft Oat Cookies

Cracking cranberry cookies with Alpro Oat Unsweetened Drink

Ingredients

  • 150g rolled oats
  • 150g plain flour
  • 2 tsp baking powder
  • 2 tbsp honey
  • 1 tsp caster sugar
  • 70g dried cranberries
  • 1 tsp cinnamon powder
  • 3 tbsp soft margarine, melted
  • 1 large egg, lightly beaten
  • 200ml Alpro Oat Unsweetened drink
  • Pinch of salt
Never store different types of cookies together. The different textures will make soft cookies chewy and crunchy cookies soft. Keep them in airtight containers with a piece of soft bread or flour tortilla to extract all the moisture and keep them fresh.
 

Preparation

  1. Preheat your oven to 200°C/ Fan 180°C/ gas 6. In a medium bowl, mix together all the ingredients.
  2. Drop one tablespoon of batter onto a baking sheet and repeat until you’ve used it all. Leave gaps between dollops as these will spread in the oven.
  3. Bake until golden brown, 15-20 minutes should do it.
  4. Let the cookies cool on a wire rack for 5 minutes and then watch them disappear!

"50cl Alpro Vanilla flavoured Soya Drink
200g quick-cook oats
60g brown sugar
60g dark chocolate chips
4 tbs natural peanut butter
A few drops of vanilla extract
A pinch of salt"

"1. Preheat the oven to 180°C and line an 8” cake tin with baking paper.
2. Mix all the ingredients together until nice and smooth. Yes, it really is that simple!
3.. Pour the mixture into the tin and bake for 35 min.
4. Leave to cool (hard, we know!) before slicing. Serve at room temperature topped with fresh fruit and a dollop of plant-based creaminess. Voila, dessert. Or nice just as it is with coffee, too.

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
