Mug Cake

Easy to make when you fancy a piece of cake

Ingredients

250 g self raising flour

70g sugar

1 tsp vanilla extract

190ml Alpro Soya Original Drink

60ml Sunflower Oil

40ml water

1 vanilla pod (seeds scraped out)

3 tbsp flaked almonds

Preparation

Mix the self raising flour, sugar, vanilla extract, pinch of salt and vanilla pod seeds in a bowl. Add the Alpro Soya Original Drink, sunflower oil and boiling water. Beat until smooth.
Divide the mixture into 4 equal parts and divide between the mugs. Sprinkle the almonds over the mixture
Heat each mug for about 1 minute and 20 seconds in the microwave on full power (800 watts). It can vary by microwave how long it takes, so stick a skewer into your cake and if it comes out dry, it's ready!
Serve immediately while they're still warm. Yummy!
