Citrus lassi

Try a luscious lassi with citrus, Alpro Soya Vanilla Big Pot and Alpro Soya Unsweetened Wholebean

125g Alpro Soya Vanilla Big Pot

1/2 tbsp grated orange zest

1 tsp grated lime zest

225ml fresh orange juice

25ml lime juice

500ml Alpro Soya Unsweetened Wholebean

180g fresh pineapple pieces

1 tbsp of agave syrup or runny honey

A few mint leaves

8 large ice cubes

1. Place the Alpro Soya Vanilla, orange and lime zest, orange and lime juice, Alpro Soya Unsweetened Wholebean, pineapple, agave syrup or honey and mint into a food processor or blender.
2. Blend for 1 to 2 minutes at high speed until the mixture is smooth and the mint finely chopped.
3. Crush the ice, add it to the mixture and blend for another minute.
4. Garnish with a mint leaf. And that's it.

The dish is already veggie but if you wanted to make it vegan you can simply replace the honey with agave syrup.
