Coconut porridge

A funky Alpro Coconut drink porridge with a fruity twist

Ingredients

250 ml Alpro Coconut Drink Fresh

75 g oatmeal

Pinch of cinnamon

A few fresh mint leaves, chopped

1 tsp honey

2 pineapple rings - cut into small pieces

A handful red grapes, halved

A little lemon

Preparation

1. Pour the Alpro Coconut drink into a small pan with the oatmeal and a pinch of cinnamon.
2. Bring to the boil and let it simmer gently for 3 minutes - stiring frequently. Remove from the heat, add the freshly chopped mint and sweeten with the honey.
3. Add the pineapple pieces into a bowl, drizzle with lemon and pour the porridge on top.
4. Let it cool for 1 minute before topping with grape halves. Enjoy!

Tip

If you like your porridge to have a runnier consistency, add some more Alpro Coconut drink.

How can you make it gluten free? The oatmeal can contain gluten. Check the packaging of the oatmeal to be sure.
