Coconut Tapioca Pudding

with Alpro Coconut drink

2 cups Alpro Almond drink

1 cup of Alpro Coconut drink

1/3 cup tapioca pearls

1/4 cup agave syrup

1 teaspoon vanilla

1 teaspoon cornstarch

1 tablespoon water mixed with the cornstarch

1/4 teaspoon salt

In a large bowl, soak the tapioca overnight (or for at least 4 hours) in 1 cup of the Alpro Almond drink.
When you're ready to cook, add the other cup of Alpro Almond drink and warm the tapioca and Alpro Almond drink mixture over medium heat.
Wait until the pudding is boiling, then add the Alpro Coconut drink, vanilla, and agave. Cook for another 10 or 12 minutes, stirring continuously. Finally, add the cornstarch mixture and salt, and cook stirring continously for five minutes.
Cool in a glass bowl for at least an hour before serving.
