1) For the summer curry dressing: blend the Alpro Simply Plain with the apple cider vinegar, mustard and olive oil. Season the mixture with mild curry powder, a pinch of salt and pepper.
2) Pre-heat the oven to 200°C / 180oC Fan / Gas 6. Peel the sweet potatoes and cut them into equal pieces. Place the pieces on a baking tray and sprinkle with the olive oil, a pinch of salt and pepper. Cook in the oven for 20 to 25 minutes until al dente.
3) Season the peeled prawns with a pinch of salt and pepper and grill or cook in the oven for a few minutes until pink. Keep warm.
4) Cut the apples into small pieces and sprinkle with some lemon juice. In a large bowl, mix the salad leaves, sliced onion, fresh herbs, roasted sweet potato and apple pieces. Serve with the summer curry dressing and the prawns.
Give the salad a more exotic twist by replacing the apples with mango's!
