Prawn Salad with a Summer Curry Dressing

Shake up your salad with this Alpro Simply Plain curry dressing

For the salad:

2 large (approx.. 400 g) sweet potatoes

1 tablespoon of lemon olive oil or extra virgin olive oil

400g peeled prawns

2 large apples

½ lemon

1 red onion, thinly sliced

150g mixed salad leaves (red beet, rocket, mustard cress)

50g fresh spinach

A few sprigs of parsley - chopped

A few sprigs of mint - chopped

a pinch of salt and pepper

For the dressing:

125g Alpro Simply Plain alternative to yogurt

1 tbsp of apple cider vinegar or lemon juice

1 tsp of mild mustard

1 tsp of extra virgin olive oil

1 tsp of mild curry powder

a pinch of salt

1) For the summer curry dressing: blend the Alpro Simply Plain with the apple cider vinegar, mustard and olive oil. Season the mixture with mild curry powder, a pinch of salt and pepper.
2) Pre-heat the oven to 200°C / 180oC Fan / Gas 6. Peel the sweet potatoes and cut them into equal pieces. Place the pieces on a baking tray and sprinkle with the olive oil, a pinch of salt and pepper. Cook in the oven for 20 to 25 minutes until al dente.
3) Season the peeled prawns with a pinch of salt and pepper and grill or cook in the oven for a few minutes until pink. Keep warm.
4) Cut the apples into small pieces and sprinkle with some lemon juice. In a large bowl, mix the salad leaves, sliced onion, fresh herbs, roasted sweet potato and apple pieces. Serve with the summer curry dressing and the prawns.
