Eggs on Toast: A Classic

Eggs on toast - Alpro style! Made with Alpro Soya Drink

8 slices wholegrain bread

6 eggs

6 tbsp Alpro Soya Original alternative to milk

Black pepper and a pinch of salt

60 g fresh spinach, finely chopped

1 tsp olive oil

12 cherry tomatoes

1. Toast the bread slices until golden brown.
2. Beat the eggs with the Alpro Soya Original and season with pepper and a pinch of salt.
3.Heat a frying pan with a little oil. Add the egg mixture and chopped spinach fry stirring constantly.
4. Simply divide the scrambled eggs on toast and serve with cherry tomatoes. Yes please!

No problem if you can't have gluten, the only thing you need to do is replace the bread with a gluten free variety.

Vegan? No problem! Use silken tofu instead of eggs. If you want the egg aroma you can use black salt (kala namak).
