Mexican Veggie Fajitas

Tasty vegetables packed into a tortilla topped off with Alpro Go On Plain

8 tortillas

6 tbsp of Alpro Go On Plain

1 onion

1 aubergine

1 large sweet potato

8 tbsp of guacamole

Couple of flat parsley sprigs

1/4 iceberg lettuce

1 sachet Fajita seasoning

2 tbsp olive oil

ground pepper and salt

1. Peel and slice the sweet potato into thin strips. Next cut the onion and the aubergine into long strips. Now place the sweet potato, aubergine and onion together into a small bowl.
2. Season the olive oil with the fajita seasoning, pour the seasoned oil over the vegetables and toss well.
3. Preheat a large skillet over a high heat setting. Sauté the vegetables until they are tender and slightly crispy for around 6 to 8 minutes.
4. Warm up the tortillas in the microwave or in a skillet and serve with the vegetables, iceberg lettuce, guacamole and Alpro Go On Plain. You can finish off by seasoning it with flat parsley.
