Granola, Kiwi & Blueberry Breakfast

A fruity granola breakfast with Alpro Simply Plain

Ingredients

100g oat flakes

40g pumpkin seeds

75g nuts, coarsely chopped (hazelnuts, Brazil nuts, walnuts, almonds, cashews)

2 tbsp linseed

50g of honey

1 tbsp of coconut oil

Handful of desiccated coconut

Handful (25g) of dried fruit (raisins, cranberries, chopped apricots)

Pinch of cinnamon

Pinch of sea salt

2 kiwi fruits

125g blueberries

600ml Alpro Simply Plain

Preparation

1. Start by making the granola: preheat the oven to 170°C, then put all dry ingredients except for the dried fruit and coconut in a bowl and sprinkle with cinnamon and salt. Melt the coconut oil and the honey in a saucepan and mix this thoroughly with the nuts and seeds.

2. Spread the granola mixture evenly over a baking tray and bake in the oven for about 20-25 minutes. After 10 minutes, shake the tray to make sure it doesn't burn. A few minutes before the end, add the dried fruit and put back in the oven.

3. Allow the granola to cool and then store in an airtight jar to keep it crisp.

4. Divide the Alpro Simply Plain into 4 bowls with the blueberries and slices of kiwi fruit. Sprinkle on the granola mixture for a truly delicious breakfast.

Tip

Keep a close eye on the granola mixture while it's in the oven as it can burn quite easily.
