1 melon (cantaloupe)

150g mango chunks

200g Alpro Plain with Coconut alternative to yogurt

10 mint leaves

Toppings: 2 tsp grated coconut, a couple of mango slithers, a couple of mint leaves and 1 tsp goji berries

Preparation

1. Cut half of the melon in small pieces and freeze with the mjango chunks for 2hrs.
2. Remove the seeds from the other half of the melon.
3. Blend the frozen cantaloupe pieces, frozen mango chunks, Alpro Plain with Coconut and mint leaves.
4. Pour into the hollowed melon half. Top with grated coconut, mango slithers, mint and goji berries.
