Mushroom Stroganoff

Make room for mushroom stroganoff with Alpro Simply Plain Big Pot

2 portions


2 tbsp olive oil

1 medium red onion, sliced

2 garlic cloves, crushed

500g chestnut mushrooms, quartered

500g Alpro Simply Plain Big Pot

1 tbsp dijon mustard

½ bunch flat leaf parsley, chopped

Freshly ground pepper and a pinch salt

1. Heat the olive oil in a pan over a gentle heat and add the onion and garlic and cook until soft.

2. Add the mushrooms and simmer for a further 10 minutes until the mushrooms are just soft.

4. Stir in the Alpro Simply Plain, mustard and parsley. Season with salt and pepper. Simmer for 5 minutes and serve. Tasty!

If you're working with mushrooms about the size of an egg you can use an egg slicer. After you brush your mushrooms to remove any dirt, trim away the bottom part of their stems. Open the blades of the slicer and orient the mushroom the way you'd like your slices to go.
