One pan pasta

with Alpro Plain Unsweetened

375g of pasta

1 clove of garlic

150g of spinach

1 avocado

400g of cherry tomatoes

30g grated parmesan cheese

6 tablespoons of Alpro Plain Unsweetened

1/2 lemon juice

Boil a pan of salted water for the pasta
Scoop out the avocado and keep half to one side. Mix the remaining avocado with 100g of the spinach, garlic, parmesan cheese and Alpro Plain Unsweetened into a smooth sauce. Add some cooking liquid from the pasta if the sauce is too thick. Season with lemon juice, nutmeg, salt and pepper
Cook the pasta al dente according to the package instructions. Drain the pasta but keep some cooking liquid
Add the sauce and mix well. Serve with the spinach, remaining avocado sliced, cherry tomatoes and remaining permesan cheese
