Pomegranate Oat Porridge

An Alpro Soya Vanilla drink & pomegranate porridge with chopped almonds for a tasty start to the day

Ingredients

250ml Alpro Soya Vanilla drink

75g oatmeal

Pinch cinnamon

2-3 leaves fresh mint, chopped

1 tsp honey

Seeds of 1 pomegranate

A little lemon juice

1 tbsp chopped almonds

Preparation

1.Pour the Alpro Soya Vanilla drink into a small pan, add the oatmeal and a pinch of cinnamon. Bring it to a gentle simmer.
2. Let it simmer for 3 minutes then remove the pan from the heat, add the freshly chopped mint and sweeten with some honey.
3. Add the pomegranate seeds to the bottom of a bowl, drizzle with lemon and pour the porridge on top.
4. Let it cool for 1 minute and finally sprinkle the top with the chopped almonds for a finishing touch. Super easy, super tasty!

Tip

How can you make it gluten free? Oatmeal may contain some gluten, check the label to ensure it is gluten free.

It is already veggie, but not vegan because of the use of honey. Simply replace the honey with sugar or a different syrup e.g. maple or agave to make this recipe vegan.
