1. Puff the quinoa. Heat a heavy pan on medium to high heat. Add the quinoa, cover the pan and shake well to prevent the quinoa from sticking. Cook until lightly brown and popped (the grains will not increase in size too much). The puffed quinoa is ready once the crackling sound begins to slow. Transfer to a baking sheet to cool.
2. Pour the Alpro Plain with Coconut into four bowls.
3. Top with the mango pieces, bluebberies, puffed quinoa and desiccated coconut.
4. If you want to take it away or eat later, omit the puffed quinoa and add it just before serving to prevent it going soggy!
