Potato Pancakes

Perfect potato pancakes with Alpro Soya Unsweetened Wholebean

Ingredients

480g potatoes (about 2 large potatoes), peeled and quartered

100g fresh spinach

50g polyunsatured spread

3 tbsp chives, chopped

2 tbsp parsley, chopped

2 tbsp coriander, chopped

150ml Alpro Soya Unsweetened Wholebean

50g plain flour

3 eggs, lightly beaten

Freshly ground pepper and a pinch salt

2 tbsp olive oil

Preparation

1. Boil the potatoes, drain and mash.
2. Add the washed spinach into a dry pan and cook until wilted. Remove from the pan and squeeze out any liquid before finely chopping.
3. Melt the spread in a hot pan and stir in the spinach and chopped fresh herbs.
3 . Place the mash in a bowl and add the spinach mixture, Alpro Soya Unsweetened Wholebean, plain flour and beaten eggs. Season with freshly ground pepper and a pinch of salt.
4. Heat the oil in a frying pan and pour a little of the mix to make a small pancake. The mix should make 12 pancakes. Cook each pancake on both sides until golden. Serve immediately. Awesome!
