250ml Alpro Soya Cuisine

400g spelt pasta

1 courgette

1 Shallot

1 Garlic clove

400ml tomato passata

70g Tomato puree

300g Cherry tomatoes

A handful of basil

2 spoons of sun-dried tomato pesto

Olive oil

Freshly ground pepper

Start out by cooking the spelt pasta al dente, accordingly to packet instructions
Cut the courgettes in half and then into slices. Cut the cherry tomatoes in half. Also slice the garlic and finely chop the shallot.
Start by heating the olive oil and then add the garlic and shallot and fry until caramalised. Add the courgettes and the cherry tomatoes. Leave to simmer on a high temperature for two minutes. Don't forget to stir regularly.
Add the tomato passata, tomato puree and the tomato pesto. Also add some basil leaves and leave to simmer for 5 minutes. Now add the Alpro Soya Cuisine and leave to simmer for 2 minutes, Be careful not to boil Season with salt and pepper if desired.
Drain the pasta and mix with the pasta sauce. Serve with more basil leaves. Enjoy!
