1. Mash the bananas and mix them with the Alpro Almond Unroasted Unsweetened, oatmeal flakes and the eggs. Beat / whisk mixture until well blended. Season witha pinch of salt and ground pepper. If the batter is too thick, add some more Alpro Almond Unroasted Unsweetened.
2. Heat some oil in a frying pan and make 15 small pancakes.
3. In another pan, fry the cherry tomatoes for 5 to 8 minutes and season with a pinch of salt and pepper. Peel the avocado, cut it into strips and drizzle with lime juice and pepper.
4. Serve the pancakes with the avocado slices, warm cherry tomatoes and rocket salad.
Instead of the banana, you can also use a ripe avocado.
You can use quinoa flakes instead of oatflakes
