1. Stir fry the spinach with the garlic until wilted. Drain out any excess water. Mix the spinach well.
2. Preheat the oven to 160°C. Grease a muffin pan or use silicone moulds.
3. Next, beat your eggs with the Alpro Almond Drink. Carefully add the flour and baking powder. Mix the spinach with the feta cubes. Season with herbs. Pour the egg & spinach mixture into the moulds. Sprinkle with herbs.
4. Bake the muffins in the oven for 30-40 minutes. Check with a skewer (which should come out dry). Leave in the oven for another 10 minutes with the door closed and the oven turned off. Remove the spinach muffins from the moulds and serve with a tomato salad. Tasty!
You can add little pieces of courgette, tomato or avocado for extra flavour.
You can easily turn this gluten free by replacing the flour in the recipe with gluten free flour.
Lactose free? No problem, you can use lactose free feta
