Sunny Rice Pudding

Nutty rice dessert with a zesty lemon touch and Alpro Rice Drink

Ingredients

1L Alpro Rice Drink

180g White Rice

60g Pecan and Pistachio Nuts (chopped)

4tbsp Agave Syrup,

3-4 threads of Saffron

Lemon Zest of half a lemon

Preparation

1. Soak some the saffron threads in 4 tablespoons Alpro Rice Drink. Bring the rest of the Alpro Rice Drink to a boil and add the rice. Bring back to a boil.
2. Add the agave syrup, lemon zest and the remaining saffron threads. Let it continue boiling until the rice is tender, stirring occasionally.
3. Add the chopped nuts, leaving some for decoration. Leave the rice pudding to cool down for 5 minutes.
4. Garnish with the remaining nuts and some agave syrup to your own taste.
