Sweet chilli prawn salad

A sweet and spicy prawn salad with Alpro Soya Single

1½ ripe mango (circa 60g)

½ red chilli

2 sprigs of mint

250 ml Alpro Soya Single alternative to cream

1 lime

400g raw prawns

1 red onion

30 g toasted pine nuts

250 g herb salad ( mix of mint, coriander, rucola , watercress , lettuce mix ... )

3 tbsp olive oil

freshly ground pepper and a pinch of salt

1. First, peel the mangoes, remove the stone and cut into cubes. Reserve 1/3 of the mango chunks for the salad. Cut the chilli pepper in half lengthways, remove the seeds and finely chop.

2. To make the dressing, blend the Alpro Soya Single with 2/3 of the mango chunks and the olive oil. Add the chili and chopped mint and season to taste with lime juice and a pinch of salt. Keep cool until you're ready to use.

3. Pan fry the prawns in oilive oil until pink and cooked through, season with pepper and a pinch of salt

4. Now assemble your salad. Toss together the herb salad, chopped onion, pine nuts, remaining mango chunks and prawns. Top with the dressing and serve straightaway.
