Tomato Gazpacho

This smooth tomato gazpacho with Alpro Almond Unsweetened will make a refreshing appetiser this summ

6 tomatoes, seeds removed

1 small cucumber, peeled and seeded

1 small onion

1 chilli pepper

1 garlic clove

3 tbsp balsamic vinegar

250ml Almond Drink Unsweetened

A pinch of ground pepper and salt

½ red pepper, chopped

3 tbsp olive oil

1. Coarsely chop all the vegetables. Blend tomatoes, cucumber (leave a piece of 5cm aside), onion, chilli pepper, garlic, balsamic, Almond Drink Unsweetened, salt & pepper until smooth.
2. Refrigerate for at least 45 minutes.
3. Grab it from your fridge and drizzle with the olive oil.
4. Top with chopped red pepper and the rest of the cucumber. Easy!
