Apple & Pear Overnight Oats

    Ingredients

    Serves 2

    • 1 small apple, cored and finely grated
    • 1 pear, cored and finely grated
    • 150g oats
    • 350ml Alpro Oat No Sugars Drink
    • 5 tsp almond butter
    • A pinch of sea salt
    • For the compote:
    • 1 apple, finely chopped
    • 1 pear, finely chopped
    • Half tbsp mapble syrup
    • Pinch of cinnamon or ground ginger
    • To serve:
    • Alpro Plain No Sugars alternative to yoghurt

    Preparation

    • Step 1

      Mix the apple, pear, oats and Alpro Oat No Sugars drink together in a medium mixing bowl, then stir in half of the almond butter. Add the pinch of salt, cover with cling film and store in the fridge overnight (about 12 hours).

    • Step 2

      For the compote, put the apple and pear into a small saucepan with 2 tbsp of water, put a lid on the pan and cook for 5 minutes. Add the maple syrup and spice , stir gently then cover and simmer on a medium heat for 10 minutes until the fruit has softened and broken down a little. Set aside, cool and cover until morning.

    • Step 3

      To serve spoon the oats into bowls and top with a spoonful of Alpro Plain No Sugars, the compote and drizzle over the remaining almond butter.
