Chocolate taste quinoa pop bar

A crunchy, chocolate flavour treat that's full of plant-based deliciousness

Ingredients

  • 120ml Alpro Chocolate Flavour drink
  • 180g uncooked quinoa
  • 100g desiccated coconut
  • 30g cacao powder
  • 70g melted coconut oil
  • 70g maple syrup
  • pinch salt

Preparation

  1. Line a shallow tin or tray with baking paper. Round, rectangular, it's up to you.
  2. Toss your uncooked quinoa into a skillet. Toast it on a low heat, shaking it around. It's ready when it starts to pop and change colour. Around 6 minutes should do it.
  3. Tip it into a large bowl and mix in all the other ingredients.
  4. Pour into your tin. Chill in the fridge for 1- 2 hours until it's nice and firm. Slice, nibble, crunch, enjoy!

60g cooked quinoa trio / tricolour quinoa (a mix of red, black and white quinoa)
40g fresh strawberries
4 tbsp organic almond butter
10g coconut powder 
2 sprigs of mint

"1. Split the Alpro Absolutely Coconut between two bowls. 
2. Top each bowl with the cooked quinoa, half the strawberries and a drizzle of almond butter. 
3. Sprinkle a little coconut powder on top and finish with a sprig of mint.
4. Eat straightaway and get your day off to a flying start!"

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
