Mix the buckwheat flour, salt and baking powder together in a bowl.

2

In another bowl, mash the banana and mix in the Alpro soya alternative to Greek Style yogurt and Soya Drink Original. Now blend the wet and dry ingredients together until you have a nice, smooth batter. If it’s too thick, just add a little more Soya Drink.

3

On a medium heat, melt the Alpro Margarine in a frying pan. (A proper pancake pan is even better.) Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter and you have a lovely stack of pancakes. Layer with baking paper if you like to stop them sticking together.

Now the festive fun starts and it's time to create your Santas. Use Alpro soya alternative to Greek Style yogurt for his beard, two blueberries for his eyes, a nut or two for his nose and arrange the raspberries in the shape of his hat.
