Coffee Tray Bake
If you do not have the Alpro café drink, this can be substituted with 100ml extra of the Alpro Vanilla alternative to yogurt, and 1 tbsp coffee granules dissolved in 2 tsp boiling water

If you do not have the Alpro café drink, this can be substituted with 100ml extra of the Alpro Vanilla alternative to yogurt, and 1 tbsp coffee granules dissolved in 2 tsp boiling water
Serves 6
- 200g soft margarine/butter
- 150g dark brown sugar
- 200g self raising flour
- 2tsp baking powder
- 3 eggs
- 120g parsnips or carrots or sweet potato, grated
- 200ml Alpro Vanilla Big Pot
- 110ml Alpro Caffe Drink
Preparation
Step 1
Pre heat the oven to 170º fan, 190ºc conventional, gas 5
Step 2
Line a 28 x18cm ovenproof dish/ tray with baking parchment
Step 3
Place the margarine, sugar, flour, baking powder and eggs into a medium size bowl and whisk for 3 minutes.
Step 4
Fold in the grated vegetable and Alpro Caffe drink (reserving one tbsp for the drizzle topping). Then, Pour into the prepared dish and smooth over the top with a wet spoon.
Step 5
Cook in the pre heated oven for 35 minutes
Step 6
Remove from the oven and cool on a wire rack.
Step 7
For the topping; when the cake has cooled slightly, spread over the Alpro Vanilla alternative to yogurt.
Step 8
Drizzle a little of the Alpro caffe drink over the surface of the cake/pudding and using the end of a spoon, drag it gently over the surface to produce swirls
