Heavenly Festive Biscuits with a Spiced Latte

Ingredients

  • 125 g Alpro baking and frying
  • 60 g cane sugar
  • Grated zest of lime
  • Grated zest of 1 orange
  • 1 tsp Rosemary
  • 1 egg
  • 1 tsp cinnamon
  • 1 L Alpro Oat Barista
  • 4 tsp Gingerbread spices
  • 250 g flour
  • A pinch of salt
Use gluten free flour to enjoy heavenly gluten free biscuits

Preparation

  1. Make your biscuit dough. In a bowl, cream together the Alpro Baking and Frying and cane sugar along with a pinch of salt, the cinnamon, orange and lime zest and rosemary until it’s creamy and fluffy. Beat in the egg. Gradually add the flour in three separate batches and mix until it all comes together in a dough. Wrap it in cling film and chill in the fridge for at least an hour.
  2. Preheat the oven to 175°C and line a baking tray with paper. Take the dough out of the fridge, knead it and roll out to a thickness of 0.5cm. Cut into shapes, whatever you fancy, either by hand or using cookie cutters. Make patterns with a fork, decorate with a sprig of rosemary or put your biscuits on sticks. Be creative!
  3. Lay them out on the baking sheet and bake for about 15 minutes in the middle of the oven until the edges are golden brown, take out of the oven and cool on a wire rack.
  4. Now make the spiced latte. Gently heat the Alpro Oat Barista along with the gingerbread spices (careful not to boil it!) stirring constantly. Once warm, whisk until it turns into a frothy foam, just like it was designed to do. Spoon into X glasses and serve with the biscuits. Simply divine!

2 Tumble a few ice cubes into a glass and add the vanilla essence.
3 Pour the avocado preparation over the ice, and top with a freshly brewed espresso.
4 Fire and ice, dark and light. Enjoy!"

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
