Oat and Cranberry Cooler

Ingredients

  • 400ml cranberry juice
  • 320ml apple juice
  • 160ml lime lemonade
  • 80ml Alpro Oat Drink Original
  • 60g small cranberries, fresh
  • 1 lime
  • 4 tbsp crushed ice

If you like your drinks tart and tangy, add extra fresh cranberries to the blender. Super sippable and so sophisticated!

Preparation

  1. Whizz up this perfect summer punch in seconds! Pop all the ingredients except the ice into your blender.
  2. Zizz until you have a nice layer of frothy foam.
  3. Pour into chilled glasses over the crushed ice, scatter with fresh cranberries and add a slice of lime.

Ingredients: 
Vegetable oil for frying
2 red onions, finely sliced
2 garlic cloves crushed
1 butternut, peeled and 2 cm diced (about 1kg)
1 large aubergines, 2 cm diced
300g cherry tomatoes, halved
2-3tbsp korma curry paste
600-800ml Alpro Coconut Unsweetened drink
1 x 400g tin chopped tomatoes
1 vegetable stock cube
100g kale, roughly chopped
1 lime, juice
30g fresh coriander, roughly chopped

To serve:
Coriander
Lime
Steamed Rice

Method:
1.	In a large deep sauté pan, heat the vegetable oil over a medium heat and add the onions. Fry for 5 minutes until starting to soften. Add the garlic, butternut and aubergine and gently fry for 5-8 minutes, stirring regularly. Add the cherry tomatoes and korma paste and mix everything together. 
2.	Pour in the Alpro Coconut Unsweetened drink, chopped tomatoes and crumble in the stock cube. Bring to a simmer and cook for 30-40 minutes until the vegetables are tender and sauce flavoursome. Add a little water if the sauce thickens and reduces too much. 
3.	During the last 10 minutes of cooking stir in the kale. Squeeze in lime juice and add half the coriander. Season to taste and serve with rice and extra lime and the remaining coriander.

"200ml Alpro Almond Drink
85g mango
60g banana
1.5g fresh mint
Topping: 1 tsp flax seeds"
