2 large sweet potatoes (scrubbed, but no need to peel)
1 red onion
2 garlic cloves
5cm ginger
2 sweet red peppers
110g Thai red curry paste
1L Alpro Coconut drink
300g whole wheat noodles, cooked
Fresh coriander
Dried chillies, ground
1 lime
Gluten intolerant? Use gluten-free noodles.
Ingredients

1L Alpro Coconut drink

Preparation

Roughly chop the sweet potato, red onion, garlic, ginger and sweet pepper. Pop the lot into a Ziplock freezer bag. (The stand-up ones designed for easy pouring are ideal.)

Add the Thai red curry paste and Alpro Coconut drink to the veggies. Seal and freeze until you need it.

When you're ready, just take it out of the freezer.

Bring it to a boil and simmer till the veggies are soft, then whizz with a stick blender until you have a smooth, creamy, deliciously spicy soup. Serve and enjoy!
