Ingredients

Serves 12

  • 6tsp vegetable oil
  • 85g plain flour
  • 2 eggs
  • 200ml Alpro Almond Unsweetened drink
  • 1/2 tsp of bicarbonate of soda

Preparation

  • Step 1

    Pre heat the oven to 240ºc Conventional Top & Bottom heat

  • Step 2

    Pour ¼ - ½ tsp oil into each cup of the 12 hole muffin tin

  • Step 3

    Place the muffin tin in the oven to heat the oil for approx. 7 mins

  • Step 4

    To make the batter, put all the ingredients into a medium bowl or large jug and whisk for 2 minutes until light and frothy. Pour into a jug as this makes it easier to pour into the muffin cups.

  • Step 5

    Reduce the oven temperature to 230ºc. Remove the muffin tin carefully from the oven and pour the batter equally between the muffin cups.

  • Step 6

    Return to the oven and cook for 18-20 minutes

  • Step 7

    Once cooked serve immediately
