Christmas Santa pancakes

Ingredients

  • 200ml Alpro soya alternative to Greek Style yogurt
  • 250ml Alpro Soya Drink Original
  • 200g buckwheat flour
  • 1 large ripe banana
  • 1 tsp (gluten free) baking powder
  • A pinch of salt
  • 1 tbsp Alpro Margarine for Baking and Frying
  • Alpro soya alternative to Greek Style yogurt
  • 400g raspberries
  • 8 blueberries
  • Blanched almonds or whole cashews
Strawberries work just as well as raspberries, and you can use Alpro soya alternative to yogurt Plain instead of Alpro Greek Style if you prefer.

Preparation

  1. Mix the buckwheat flour, salt and baking powder together in a bowl.
  2. In another bowl, mash the banana and mix in the Alpro soya alternative to Greek Style yogurt and Soya Drink Original. Now blend the wet and dry ingredients together until you have a nice, smooth batter. If it’s too thick, just add a little more Soya Drink.
  3. On a medium heat, melt the Alpro Margarine in a frying pan. (A proper pancake pan is even better.) Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter and you have a lovely stack of pancakes. Layer with baking paper if you like to stop them sticking together.
  4. Now the festive fun starts and it's time to create your Santas. Use Alpro soya alternative to Greek Style yogurt for his beard, two blueberries for his eyes, a nut or two for his nose and arrange the raspberries in the shape of his hat. A bit of extra soya alternative to Greek Style yogurt makes the perfect fur trimming. Serve up and see them smile!

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
