- 250g pack cooked beetroot (in own juice)
- 100g dairy free margarine
- 200g dark chocolate
- 250g caster sugar
- 150g Alpro Plain Greek Style alternative to yogurt
- 125g self-raising flour
- 1 tsp baking powder
- 25g cocoa powder
- Zest of 1 orange and 2 tbsp of the juice
Ingredients
- 250g pack cooked beetroot (in own juice)
- 100g dairy free margarine
- 200g dark chocolate
- 250g caster sugar
- 150g Alpro Plain Greek Style alternative to yogurt
- 125g self-raising flour
- 1 tsp baking powder
- 25g cocoa powder
- Zest of 1 orange and 2 tbsp of the juice
Preparation

Line a 20x20cm baking tray with baking paper. Heat the oven to 160ºc fan, 180ºc, gas mark 4.

Blitz the beetroot with a hand blender or food processor into very small pieces. Put the chocolate and margarine into saucepan and gently heat through . Stir the mix as you go until the chocolate and margarine have melted. Turn off the heat and stir in the beetroot mixture, orange zest, orange juice and sugar.

Sieve the flour into a separate bowl, along with the baking powder and the cocoa powder.

Stir the dry ingredients in with the beetroot mix. Pour it all into the prepared baking tin. Bake for 45mins.
