Virgin Blueberry Sour

A vegan take on a cooling classic, made with Alpro Original Soya Drink

Ingredients

Serves 3

  • 200g blueberries + extra to decorate
  • 2 lemons (juice)
  • 1 tbsp agave syrup
  • 100ml Alpro Original Soya drink
  • 2 tbsp aquafaba (the liquid from a can of chickpeas – which you can use in one of our other tasty recipes!)
  • 300-400ml ginger ale (depending on the size and type of your glasses – around 100 ml per person)
  • 4 ice cubes

Preparation

Step 1

Crush the blueberries in the base of a cocktail shaker, then add the lemon juice, agave syrup, Alpro Original Soya Drink and the aquafaba.

Step 2

Shake once (around 20 sec) without the ice to make the aquafaba foamy, then add the ice and give it another quick 10 second shake.

Step 3

Strain and half fill your glasses. Finish with a splash of ginger ale and some extra blueberries.
