Blueberry Vanilla Cake

A simple yet satisfying plant-based recipe, combining great taste with effortless preparation.

Ingredients

  • 250g self-raising flour
  • 150g caster sugar
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 220ml of Alpro Soya Original alternative to milk
  • 120ml of sunflower or rapeseed oil
  • 1 tsp vanilla extract or essence
  • Grated zest and juice of one lemon
  • 80g blueberries
  • 3 tbsp of flaked almonds
 
Make this recipe gluten free by using a gluten free self-raising flour.

Preparation

  1. Preheat your oven to 180°C /160 fan/ gas mark4 .  Line a 20cm round cake tin with parchment paper.
  2. In a mixing bowl, stir together the self-raising flour, sugar, baking powder and bicarbonate of soda. Add the Alpro Soya Original, oil, zest and juice of one lemon, and vanilla essence. Mix together until combined. Gently fold in the blueberries.
  3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 30-35  minutes . Test by piercing with a wooden skewer – when it comes out clean, your cake is ready.
  4. Let the cake cool in the tin for 10—15 minutes, then transfer the cake to a wire rack and cool completely (We know, hard not to dive in straightaway!). Fab with coffee at any time, or as a dessert with fresh fruit and a spoonful of Alpro alternative to yogurt

200g quick-cook oats
60g brown sugar
60g dark chocolate chips
4 tbs natural peanut butter
A few drops of vanilla extract
A pinch of salt"

"1. Preheat the oven to 180°C and line an 8” cake tin with baking paper.
2. Mix all the ingredients together until nice and smooth. Yes, it really is that simple!
3.. Pour the mixture into the tin and bake for 35 min.
4. Leave to cool (hard, we know!) before slicing. Serve at room temperature topped with fresh fruit and a dollop of plant-based creaminess. Voila, dessert. Or nice just as it is with coffee, too.

Buck up your taste buds with buckwheat & banana pancakes using Alpro Coconut Drink

"For the pancakes:
200ml Alpro Plain with Coconut 
100-150ml Alpro Coconut Drink
250g buckwheat flour
1 large ripe banana
1 tsp baking powder
A pinch of salt
1 tbsp coconut or groundnut oil, or Alpro Margarine for Baking and Frying

Toppings:
12 tbsp Alpro Plain with Coconut 
8 tbsp pomegranate seeds
4 tbsp chia seeds (optional)"

"1. Why wait for Pancake Day! Mix the buckwheat flour, salt and baking powder in a bowl. In another bowl, mash the banana and mix with the Alpro Plain with Coconut and the Coconut Drink . 
2. Combine the wet and dry mixtures and blend until you have a nice, smooth batter. If it’s too thick, just splosh in a little more Coconut Drink.
3. Next, heat up some coconut oil on a medium heat. Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter.
4. Serve topped with the Alpro Plain with Coconut and pomegranate seeds. Chia seeds, too, if you like. Breakfast, dessert, snack – make these any time you feel like a yummy plateful of plant-based goodness!"
