Chocolate Oatmeal Bake
Ingredients
- 50cl Alpro Vanilla flavoured Soya Drink
- 200g quick-cook oats
- 60g brown sugar
- 60g dark chocolate chips
- 4 tbs natural peanut butter
- A few drops of vanilla extract
- A pinch of salt
Use fondant chocolate (>75% cacao) which contains a negligible amount of lactose and use a lactose free peanut butter.
Preparation
- Preheat the oven to 180°C and line an 8” cake tin with baking paper.
- Mix all the ingredients together until nice and smooth. Yes, it really is that simple!
- Pour the mixture into the tin and bake for 35 min.
- Leave to cool (hard, we know!) before slicing. Serve at room temperature topped with fresh fruit and a dollop of plant-based creaminess. Voila, dessert. Or nice just as it is with coffee, too.
