Date Crunch Bark

Fill the snack gap with this easy freeze recipe

Ingredients

  • 10 Medjool dates
  • 3 tbsp almond spread
  • 1/2 pot (3 tbsp) Alpro Plant Protein red fruit
  • 2 tbsp red berries
  • 2 tbsp almonds, roughly choppped
  • 150g dark chocolate
Use any berries or fruit you prefer

Preparation

  1. Line a freezer-proof tray with baking paper. Slice into the dates and slip out the stones. Open them out and spread over your tray, close together and flattened with the back of a spoon to create a date base layer.
  2. Dob on the almond spread and then spread a thick layer of the Alpro Plant Protein red fruit over the top of that.
  3. Sprinkle with the red berries and chopped almonds.
  4. Melt the dark chocolate in a bowl over a pan of gently simmering water. Then drizzle over the nuts and berries. Freestyle or fancy, it's up to you!
  5. Freeze for 2-3 hours until it's hard and snappable. Munch, crunch, enjoy!

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
