Maple, Pecan and Coconut Granola with Berries

Ingredients

Serves 10

  • 1 pear, peeled and diced
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1 tsp vanilla bean paste
  • 3 tbsp sunflower oil
  • 50ml maple syrup
  • 200g jumbo oats
  • 75g pecans, chopped
  • 100g mixed seeds
  • 40g raw coconut chips
  • Alpro This Is Not M*lk Semi, to serve
  • Berries, to serve

Preparation

  • Step 1

    Preheat the oven to 170°C (150°C fan).

  • Step 2

    Add the pear to a small saucepan with 3 tbsp of water, cover and set over a medium heat for 5-8 minutes, until softened. Transfer to a blender with the cinnamon, ginger, vanilla, oil and syrup, and blitz until smooth and combined.

  • Step 3

    Add the oats, pecans, seeds and a pinch of sea salt to a bowl then stir in the pear mixture until everything is well coated.

  • Step 4

    Tip onto a large baking tray and bake for 35-40 minutes until golden, stirring halfway through.

  • Step 5

    Leave to cool completely before scattering over the coconut and stirring through.

  • Step 6

    Store in an airtight container and serve with chilled Alpro This Is Not M*lk Semi and berries.
