Grüner Spargel mit knusprigem Ganda-Schinken und Parmesan

Zutaten

  • 24 Stangen grüner Spargel
  • 100 g Rucola
  • 50 g Margarine
  • 8 Scheiben Ganda-Schinken / Prosciutto
  • 2 Scheiben Graubrot
  • 30 g Parmesan
  • 4 EL Alpro Soja-Joghurtalternative Ohne Zucker
  • 10 g Parmesan, gerieben
  • 2 TL Senf
  • 1 Limette, Saft oder Schale
  • Ein paar Tropfen Trüffelöl
  • Pfeffer & Salz

Vorbereitung

  1. Den Ofen auf 200° C erhitzen. Den Schinken zwischen zwei Bögen Backpapier legen und 20 Minuten im Ofen knusprig trocknen. Die Brotscheiben raspeln oder zu Semmelbröseln verarbeiten, mit 1 EL Margarine vermengen und im Ofen goldbraun backen.
  2. Spargel putzen, schälen und die harten, dicken Enden entfernen. Mit der restlichen Margarine im Ofen backen, bis der Spargel bissfest ist. Mit Pfeffer würzen.
  3. Dressing herstellen: Alpro Soja-Joghurtalternative Natur Ohne Zucker mit 10 g geriebenem Parmesan, Senf, Limettensaft und Zitronenschale, Pfeffer und Salz mischen.
  4. Den gebackenen Spargel mit Parmesanspänen, getrocknetem Schinken und Rucola servieren. Mit dem Dressing und ein paar Tropfen Trüffelöl beträugeln, mit den Brot-Croutons und einer Prise Salz toppen.

A quick and easy quiche packed with flavour, with Alpro Plain Soya alternative to Greek Style yogurt

1 pack ready-made short crust pastry, chilled
400g  Alpro Plain Soya alternative to Greek Style yogurt
1 courgette 
1 sweet red pepper 
125g cherry tomatoes 
3 eggs
2 tbsp red pesto 
40g Parmesan, grated
Alpro Margarine for Baking and Frying
Handful of fresh basil
Nutmeg
Freshly ground pepper and salt

"1.	Preheat the oven to 180ºC and get a 10” loose bottomed, fluted flan tin out and prepped ready. 
2.	Make your quiche filling. Chop the courgette and sweet peppers. Heat a little Alpro Margarine for Baking and Frying in a skillet and fry the veg for about five minutes. Season with pepper and salt. Put the Alpro Plain Soya alternative to Greek Style yogurt and the three eggs in a bowl and whisk well. Add half the grated Parmesan and a few chopped basil leaves. Stir and season with nutmeg, freshly ground pepper and salt. Cut the cherry tomatoes in half and put to one side.
3.	Now for the case. Remove the pastry dough from the fridge and roll it out on a clean, floured surface. Position over the tin and ease it in gently, pressing against the base and sides to get a good fit. Trim off any excess from around the top. Prebake if necessary, according to the instructions on the pack.
4.	And… assemble. Brush the pastry base with the pesto and spread the cooked veg over the top. Pour over the cheesy Alpro mixture and sprinkle with the rest of the grated Parmesan cheese. Cover with the halved cherry tomatoes and bake for about 45 minutes until golden-brown. Slice into segments and serve with fresh basil leaves and a green salad. Bright, vibrant and full of Mediterranean sunshine. "

Mediterrane Quiche

Pimp your porridge with apple, blackberries and Alpro Oat Unsweetened Drink

"1l Alpro Oat Unsweetened 
160g porridge oats (quick cooking) 
2 eating apples 
250g blackberries 
4 tbsp shelled pistachio nuts (optional)"

"1.	Core and thinly slice the apples. 
2.	Pop in a pan along with the Alpro Oat Unsweetened and the porridge oats.
3.	Bring to the boil then reduce to a simmer. Keep stirring for around three minutes until it’s nice and thick and smooth. 
4.	Spoon into four breakfast bowls and top with the blackberries, pistachio nuts if you like them, and an extra splash of Alpro Oat Unsweetened. Ready in a flash and packed with oaty, fruity goodness!"
