Frozen Vanilla Rice Cake

An easy-freezey raspberry and vanilla delight

 

Ingredients

  • 4 rice cakes
  • 100g fresh raspberries
  • 2 tbsp cacao nibs
  • 4 tbsp Alpro Vanilla Plant based alternative to yoghurt
  • 4 tbsp peanut butter
Try this with flavoured rice cakes

Preparation

  1. Spread the rice cakes with the peanut butter. Be generous!
  2. Sprinkle a helping of fresh raspberries over the each one and gently mash with a fork.
  3. Top with a tablespoon of the Alpro Vanilla Plant based alternative to yoghurt, the cacao nibs and a twist of salt.
  4. Freeze overnight. When you're ready, take out, defrost for 5 minutes and devour!
