Fruity Pancake Tacos

Flipping fantastic pancakes jam-packed with fruit

Create that taco shape by cooling the folded pancakes in between the cups of an upside down muffin tin.

Use gluten free flour

  • 1 ripe banana
  • 300ml Alpro Almond Drink
  • 1 tsp vanilla extract
  • 2 tbsp sunflower oil
  • 200g wholewheat flour
  • 1 tbsp baking powder
  • ½ tbsp gingerbread spice mix
  • 1 tsp salt
  • Toppings:
  • 8 tbsp Alpro Plant Based Alternative to Yoghurt Nature No Sugars
  • Blueberries & pomegranate seeds
  • Drizzle of peanut butter
  • Flax seeds
  • Fresh mint leaves, chopped.

Προετοιμασία

Βήμα 1

Mash the banana in a large bowl and whisk in the Alpro Almond drink, vanilla extract and sunflower oil until smooth and creamy.

Use a sieve to sift the dry ingredients into a separate bowl, then tip into the wet mix and whisk until well mixed together.

Heat a lightly oiled frying pan over a medium heat. Pour in 1-2 tbsp of batter (until your little pancake is around 4 inches across) and cook for 1-2 minutes until the base sets and bubbles pop up all over the top. Flip and cook the other side for another minute. Keep cooking until all the batter is gone.

Line them up like tacos, then fill them with a spoonful of Alpro Plant Based Alternative to Yoghurt Nature No Sugars and all the other toppings. Hands on and enjoy!
