Risotto onctueux aux poireaux, petits pois et épinards

L’onctuosité d’un risotto avec la boisson au Soja Sans Sucres alpro ​

Ingredients

  • margarine ou huile
  • 1 oignon, finement haché
  • 2 poireaux, finement émincés
  • 300g de riz Arborio
  • 500ml de boisson au Soja Sans Sucres alpro​
  • 700ml de bouillon de légumes
  • 1 citron, jus et zeste, plus des quartiers supplémentaires pour le service
  • 100g d'épinards cuits
  • 200g de petits pois cuits
  • Persil plat, haché pour servir
  • 50g de parmesan végétal, facultatif, plus un supplément pour le service.

Preparation

  1. Mettez le bouillon dans une casserole moyenne et réchauffez-le doucement, gardez-le à feu doux jusqu'à ce qu'il soit prêt à être utilisé. Dans une grande casserole profonde, faites chauffer de la margarine ou de l'huile à feu moyen et ajoutez l'oignon et les poireaux. Faites-les revenir doucement pendant 10 minutes jusqu'à ce qu'ils soient tendres et commencent à devenir translucides, salez et poivrez. Ajoutez le riz et faites-le sauter pendant 2 à 3 minutes jusqu'à ce qu'il devienne transparent.
  2. Augmentez le feu et commencez à incorporer lentement une louche de bouillon à la fois. Remuez constamment avec une cuillère en bois et laissez le bouillon s'absorber dans le riz. Une fois le bouillon ajouté, ajoutez lentement la boisson au Soja Sans Sucres alpro. Continuez la cuisson à feu moyen en remuant régulièrement jusqu'à ce que le riz soit presque tendre.​
  3. Incorporez le jus de citron, les épinards et les petits pois et assaisonnez selon votre goût. Si vous utilisez du parmesan, incorporez-le maintenant et garnissez avec le persil, les quartiers de citron supplémentaires et le parmesan.

A deliciously savoury, seasonal starter for summer with Alpro Simple Plain

"24 green asparagus spears 
100g rocket 
50g Alpro Soya Baking and Roasting 
8 slices Ganda ham / Cured ham (prosciutto) 
2 slices brown bread
30g Parmesan
For the dressing: 
4 tbsp Alpro Simple Plain
10g Parmesan, grated 
2 tsp mustard 
1 lime, juice and zest
A few drops of truffle oil 
Freshly ground black pepper & sea salt"

"1.	Prepare the toppings. Heat your oven to 200°C. Spread the Ganda/cured ham/prosciutto between two sheets of baking paper and dry them in the oven for 20 minutes until crispy. Grate or process the bread slices to make breadcrumbs, rub together with 1 tbsp Alpro Soya Baking and Frying and bake in the oven until golden brown. 
2.	Cook the asparagus. Clean and peel the spears and remove the hard, thick ends. Bake them in the remaining Alpro Soya Baking and Roasting until al dente and season with freshly ground pepper.
3.	Make the dressing: Mix the Alpro Simple Plain together with 10g grated Parmesan, the mustard, lime juice and zest, pepper and salt. 
4.	Serve the baked asparagus topped with shavings of Parmesan, the dried Ganda/cured ham/prosciutto and rocket. Drizzle on the dressing and finish with a few luxurious drops of truffle oil, the bread crumble and a twist of sea salt."

Easy-peasy pasta layers with creamy veg and Alpro Soya Unsweetened Drink

"250ml Alpro Soya Cuisine 
150ml Alpro Soya Unsweetened Drink
1 shallot
2 courgette
2 leeks
2 cloves of garlic
Tarragon
200g spinach
1/2 lime 
250g mozzarella, grated
16 fresh lasagne sheets
A pinch of nutmeg
Sea salt and white pepper"

"1.	Preheat your oven to 180ºC. Finely dice the shallot, leeks and garlic. Thinly slice the courgette lengthwise. 
2.	Make the yummy sauce. Fry the shallot, garlic and leek until the shallot is translucent. Add the spinach and cook just until it’s wilted. Add the Alpro Soya Cuisine and Alpro Soya Unsweetened Drink and season with sea salt, pepper, tarragon, nutmeg and lime until it tastes just how you like it.
3.	Arrange alternating layers of sauce, lasagne leaves, zucchini slices and half the mozzarella in a baking dish and scatter the rest of the mozzarella over the top.
4.	Bake on the middle rack for about 30 minutes until golden brown and bubbling.

Lasagnes végétariennes aux légumes verts

A summery salad with a twist, and Alpro Simple Plain

"For the salad:
400g uncooked peeled prawns
150g mixed leaf salad (e.g. red beet leaves, rocket, mustard, lettuce)
50g radish sprouts
2 large sweet potatoes (+/- 400 g)
2 large apples
1 red onion
1/2 lemon
A few sprigs of parsley
A few sprigs of mint 
1 tbsp of lemon olive oil or extra virgin olive oil
Salt and pepper

For the dressing:
125g Alpro Simple Plain 
1 tbsp of apple cider vinegar or lemon juice
1 tsp mild mustard
1 tsp extra virgin olive oil  
1 tsp curry powder
Salt
Freshly ground pepper"

"1. Make the deliciously aromatic curry dressing first so the flavours have time to mingle. Blend together the Alpro Simple Plain with the apple cider vinegar, mustard and olive oil. Season the mixture with salt, pepper and curry powder, to taste. You’re done.
2. Preheat the oven to 200 °C. Peel the sweet potatoes and cut them into chunky chunks. Arrange on a baking tray and sprinkle with the olive oil, salt and pepper and cook until just ‘al dente’ for 20 -25 minutes. 
3. Season the peeled prawns with salt and pepper. Then you can grill them or cook them along with the sweet potatoes in the oven. Keep them warm until you’re ready to serve. 
4. Dice the apple and sprinkle with lemon juice. In a large salad bowl, toss together the leaves, chopped herbs, sweet potato and apple. Serve with the curry dressing and grilled prawns. Yay! It’s summer all year round with this sweet and spicy take on a classic prawn salad."
