Ingredients

  • 250g de noix de cajou, trempés dans de l'eau la nuit précédente
  • 500g de brassé végétal Nature Sans Sucres alpro ​
  • 2 cuillères à soupe de sirop d’agave (ou de sirop d’érable)​
  • 2 cuillères à soupe d'huile de noix de coco
  • Le zeste d'un demi-citron finement râpé
  • 3 tasses d'espresso
  • 1 cuillère à soupe de sucre de noix de coco
  • 2 cuillères à soupe d'essence d'amande
  • 500g de biscuits à la cuillère (boudoirs)
  • De la poudre de cacao pour saupoudrer

Preparation

  1. Préparez la "crème" de noix de cajou. Mettez les noix de cajou ainsi que l'eau de cuisson dans une casserole. Portez à ébullition et égouttez ton mélange puis rincez-le à l'eau froide. Ajoutez les noix de cajou dans un mixeur avec le brassé végétal Nature Sans Sucres alpro, le sirop d’agave et l'huile de coco. Battez votre mélange jusqu'à l'obtention d'une texture onctueuse et crémeuse. Ajoutez le zeste de citron et réserve ton mélange au réfrigérateur.​
  2. Mélangez l'espresso, le sucre de coco et l'essence d'amande.​
  3. C'est le moment de tout réunir ! Utilisez un plat de service peu profond (15x23 cm ou équivalent) et versez-y un peu de ta préparation à base de café. Disposez la première couche de biscuits pour qu'ils s'en imprègnent et arrosez-les avec la moitié du reste de café. Recouvrez le tout avec la moitié de la crème et ajoute une autre couche de biscuits. On recommence ! Arrosez à nouveau avec le reste du café et recouvre du mélange crémeux alpro/noix de cajou.​
  4. Laissez refroidir au frigo pendant au moins 2 heures. Terminez en utilisant un tamis pour saupoudrer le dessus de poudre de cacao. Régalez tes convives avec ce dessert "buonissimo" !​

Ingredients: 
For the pancakes
200g plain flour
1 tbsp baking powder
Pinch salt
180ml Alpro Oat Unsweetened drink
2 medium free-range eggs, beaten
Vegetable oil, for frying
Alpro Plain No Sugars Big Pot to serve

For the salsa
2 ripe avocado, 1cm dice
100g cherry tomatoes, quartered
1/2 x 300g tin sweetcorn, drained
30g bunch coriander, roughly chopped
1 red onion, finely chopped
2 limes, juiced, plus extra wedges to serve
1 red chilli, deseeded and finely chopped
Salt & pepper

Tip:
Flours vary, so you may need to add a little more Alpro Oat Unsweetened drink to reach a pourable pancake consistency. It needs to still hold its shape in the pan to form the American style pancakes, so try before adding more drink. 

Method:
1.	To make American-style pancakes put the flour and baking powder in a large bowl with a pinch of salt. In a jug, whisk the Alpro Oat Unsweetened drink with eggs.
2.	Mix all the salsa ingredients together and set aside.
3.	Use a balloon whisk to gradually mix the wet ingredients into the dry to make a pancake batter. Brush a non-stick frying pan with more vegetable oil then pour in batter to make small 10cm pancakes, about 2-3 tbsp of batter. Cook until bubbles form on the surface then flip and cook until other side is golden. This will be about 2-3 minutes on each side. 
4.	 Serve 2-3 pancakes a person with a spoonful of Alpro Plain No Sugars Big Pot and the salsa and extra lime wedges.

350ml Alpro Oat Drink No Sugars
1 banana
1 tsp vanilla extract
Pinch salt
300g self raising flour
16g baking powder
1/2 tsp bicarb
250g fresh blueberries

To serve:
Fresh fruit and (optional) agave syrup 

1. Start with the pancake batter. Mash the banana in a bowl. Whisk in the Alpro Oat Drink No Sugars, vanilla extract and salt.
2. Sift the self raising flour, baking powder and bicarb into a separate, big bowl and tumble together. Pour the wet mixture over the dry stuff and whisk again until you have a lovely smooth batter.
4. Set it aside and let it stand for 20 minutes. Then gently stir in the blueberries – you don’t want blueberry mush!
5. Heat a drizzle of oil in a frying pan. Or pancake pan if you have one. Pour in about 2 tablespoons of batter and cook for 1-2 mins, until the base sets and bubbles pop out all over the top. Flip and cook the other side for a minute. Repeat until all your batter is used up.
6. Stack them up with the fresh fruit and a drizzle of agave syrup, if you like. Then watch them fly off the plate like hot... pancakes!

"200g plain flour
165g finely ground polenta 
5ml baking powder
½ tsp bicarbonate of soda 
2.5g salt
250ml Alpro Oat drink
1 tbsp vanilla essence
65g maple syrup + 1 tbsp extra
80 g melted Alpro baking and frying 
250g blueberries + 100g extra for garnish 
A small sprig of thyme

"1. First, the prep. Preheat your oven to 180°C (fan). Line an 18cm cake tin with baking paper, or brush with Alpro baking and frying. 
2. In a large bowl, mix together the flour, polenta, baking powder, bicarb and salt. In a separate jug or bowl, whisk together the Alpro Oat drink, vanilla, maple syrup and coconut oil. 
Add the liquid ingredients to the dry ingredients and stir till it's all well mixed together. 
3. Pour the cake mix into your prepped tin, and scatter on 3/4 of the berries. Push them down into the batter and then arrange the rest on the top. Bake in the oven for 30-35 minutes, till a toothpick comes out clean. 
4. While the cake's in the oven, pop the extra berries and maple syrup into a small saucepan with the thyme leaves. Add a little water and bring to the boil. Cook for 5 minutes or until it turns into a lovely, oozy syrup. 
5. Take the cake out of the oven and straightaway spread the cooked berry syrup over the top. Leave to cool for a couple of minutes before removing from the tin. Serve it while it's still warm with a dollop of something plant-based and creamy. Delicious!"

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."
