Pancakes à l’américaine

Ingredients

Pour les crêpes:

  • 200 g de farine
  • 1 cuillère à soupe de levure chimique
  • 1 pincée de sel
  • 180 ml d’Alpro Boisson à base d'Avoine Sans Sucres
  • 2 œufs battus
  • Alpro Nature Alternative Végétale au Yaourt Sans Sucres 500g (en supplément)
  • Huile de colza

Pour la sauce salsa:

  1. 150 g de maïs (en boîte) égoutté
  2. 100 g de tomates cerises en quartiers
  3. 30 g de coriandre grossièrement hachée
  4. 2 avocats mûrs en cubes de 1 cm
  5. 1 oignon rouge finement haché
  6. 1 piment rouge sans pépins finement haché
  7. Le jus de 2 citrons verts + des quartiers supplémentaires pour l'accompagnement
  8. Poivre et sel

Pour obtenir de véritables pancakes à l’américaine, il faut une pâte liquide mais assez consistante pour garder sa forme dans la poêle. Faites un essai et ajoutez un trait d’Alpro Boisson à base d’Avoine si la pâte est trop épaisse.

Preparation

  1. Dans un grand bol, mélangez la farine et la levure chimique avec une pincée de sel. Dans un autre bol, battez les œufs avec l’Alpro Boisson à base d’Avoine.
  2. Mélangez tous les ingrédients de la salsa et réservez.
  3. Versez progressivement le mélange œufs battus/lait sur la farine et battez jusqu'à l’obtention d’une pâte (type pâte à crêpes épaisse). Faites cuire les crêpes dans un peu d’huile. Utilisez 2 à 3 cuillères à soupe de pâte pour obtenir de petites crêpes de 10 cm de diamètre. Laissez cuire jusqu'à ce que des bulles apparaissent à la surface. Retournez-les et continuez la cuisson jusqu'à l’obtention d’une jusqu’à l’obtention de pancakes joliment dorés. Comptez environ 2 à 3 minutes pour chaque côté.
  4. Servez 2-3 pancakes par personne avec une cuillère remplie d’Alpro Nature Alternative Végétale au Yaourt Sans Sucres 500g et de la sauce salsa et des quartiers de citron vert.

"For the pancakes:
200ml Alpro Plain with Coconut 
100-150ml Alpro Coconut Drink
250g buckwheat flour
1 large ripe banana
1 tsp baking powder
A pinch of salt
1 tbsp coconut or groundnut oil, or Alpro Margarine for Baking and Frying

Toppings:
12 tbsp Alpro Plain with Coconut 
8 tbsp pomegranate seeds
4 tbsp chia seeds (optional)"

"1. Why wait for Pancake Day! Mix the buckwheat flour, salt and baking powder in a bowl. In another bowl, mash the banana and mix with the Alpro Plain with Coconut and the Coconut Drink . 
2. Combine the wet and dry mixtures and blend until you have a nice, smooth batter. If it’s too thick, just splosh in a little more Coconut Drink.
3. Next, heat up some coconut oil on a medium heat. Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter.
4. Serve topped with the Alpro Plain with Coconut and pomegranate seeds. Chia seeds, too, if you like. Breakfast, dessert, snack – make these any time you feel like a yummy plateful of plant-based goodness!"

350ml Alpro Oat Drink No Sugars
1 banana
1 tsp vanilla extract
Pinch salt
300g self raising flour
16g baking powder
1/2 tsp bicarb
250g fresh blueberries

To serve:
Fresh fruit and (optional) agave syrup 

1. Start with the pancake batter. Mash the banana in a bowl. Whisk in the Alpro Oat Drink No Sugars, vanilla extract and salt.
2. Sift the self raising flour, baking powder and bicarb into a separate, big bowl and tumble together. Pour the wet mixture over the dry stuff and whisk again until you have a lovely smooth batter.
4. Set it aside and let it stand for 20 minutes. Then gently stir in the blueberries – you don’t want blueberry mush!
5. Heat a drizzle of oil in a frying pan. Or pancake pan if you have one. Pour in about 2 tablespoons of batter and cook for 1-2 mins, until the base sets and bubbles pop out all over the top. Flip and cook the other side for a minute. Repeat until all your batter is used up.
6. Stack them up with the fresh fruit and a drizzle of agave syrup, if you like. Then watch them fly off the plate like hot... pancakes!
