Pancakes aux potirons d'Halloween

Ingredients

  • 400 g de potiron, en dés
  • 1 œuf
  • 200 ml d'Alpro Boisson à base d'avoine
  • 2 c. à s. de sirop d'érable ou d’agave
  • 200 g de farine d'épeautre
  • 2 c. à c. de poudre à lever
  • 1 c. à s. d'épices pour pain d'épice
  • Beurre, margarine ou huile végétale
  • Sel
  • 100 g de chocolat noir (70%)
  • 60 ml d’Alpro Boisson à base d'avoine
  • 4 c. à s. de farine d'épeautre
  • Du sirop d'érable en plus pour la garniture

Preparation

  1. Cuisez les dés de potiron à la vapeur jusqu'à ce qu'ils soient tendres, puis égouttez-les et réduisez-les en purée à l'aide d'un blender (ou d'un presse-purée si vous n'en avez pas).
  2. Faites la pâte à crêpe. Mélangez la purée de potiron avecl'œuf, les 200ml de l’Alpro Boisson à base d'avoine et le sirop d'érable ou d'agave. Ajoutez la farine, la poudre à lever, les épices pour pain d'épices et une pincée de sel, puis fouettez ensemble jusqu'à obtention d'une pâte lisse. Réservez.
  3. Au tour de la pâte à toiles d'araignée en chocolat : Fais fondre doucement le chocolat dans un bain marie, mélange-le et laisse-le refroidir un peu avant d'y ajouter les 60 ml de boisson Alpro Avoine, la farine et l'eau. Mélangez la préparation jusqu'à ce que la pâte devienne uniforme et verse-la dans une poche à douille.
  4. Cuisez les crêpes. Chauffez un peu de beurre ou d'huile dans une poêle à frire et dessinez quatre petits pâtons d’environ 8 cm de diamètre chacun. Cuisez quelques minutes jusqu'à ce que le dessous soit doré.
  5. Que la fête commence ! À l'aide de la poche à douille, étirez délicatement les toiles en chocolat sur la face supérieure non cuite, retournez-les et achevez la cuisson. Continuez jusqu'à ce que toute la pâte soit consommée - vous devriez obtenir 20-25 crêpes en tout. Nappez de sirop d'érable à souhait. Diablement délicieux !

"1. Creamy on top, crunchy underneath, fruity all the way through! Preheat the oven to 180 °C and grease the sides of a cake tin. Crush the cookies and mix them with melted Alpro Baking & Frying Margarine then spread evenly over the base of the tin. Keep cool until you’re ready to use.
2. Whisk the Alpro Plain Soya alternative to Greek Style yogurt with the cane sugar, oil and egg yolks until it’s smooth and creamy. Add the seeds from the vanilla pod, the lime zest and 2 tablespoons of lime juice and mix in. Add extra lime or vanilla if you think it needs it. 
3. Whisk the egg whites until stiff and gently fold in the Alpro mixture, keeping it light and fluffy. Arrange the mandarins and half of the blueberries over the biscuit base. Then scoop the Alpro Plain Soya alternative to Greek Style yogurt filling over the top and bake in the preheated oven for 40-45 minutes until the top of the cake is golden brown. 
4. After it cools down, decorate with the rest of the blueberries and a sprig or two of mint. Stand back and admire. You made that! "

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."

Gâteau à la Vanille

350ml Alpro Oat Drink No Sugars
1 banana
1 tsp vanilla extract
Pinch salt
300g self raising flour
16g baking powder
1/2 tsp bicarb
250g fresh blueberries

To serve:
Fresh fruit and (optional) agave syrup 

1. Start with the pancake batter. Mash the banana in a bowl. Whisk in the Alpro Oat Drink No Sugars, vanilla extract and salt.
2. Sift the self raising flour, baking powder and bicarb into a separate, big bowl and tumble together. Pour the wet mixture over the dry stuff and whisk again until you have a lovely smooth batter.
4. Set it aside and let it stand for 20 minutes. Then gently stir in the blueberries – you don’t want blueberry mush!
5. Heat a drizzle of oil in a frying pan. Or pancake pan if you have one. Pour in about 2 tablespoons of batter and cook for 1-2 mins, until the base sets and bubbles pop out all over the top. Flip and cook the other side for a minute. Repeat until all your batter is used up.
6. Stack them up with the fresh fruit and a drizzle of agave syrup, if you like. Then watch them fly off the plate like hot... pancakes!

Buck up your taste buds with buckwheat & banana pancakes using Alpro Coconut Drink

"For the pancakes:
200ml Alpro Plain with Coconut 
100-150ml Alpro Coconut Drink
250g buckwheat flour
1 large ripe banana
1 tsp baking powder
A pinch of salt
1 tbsp coconut or groundnut oil, or Alpro Margarine for Baking and Frying

Toppings:
12 tbsp Alpro Plain with Coconut 
8 tbsp pomegranate seeds
4 tbsp chia seeds (optional)"

"1. Why wait for Pancake Day! Mix the buckwheat flour, salt and baking powder in a bowl. In another bowl, mash the banana and mix with the Alpro Plain with Coconut and the Coconut Drink . 
2. Combine the wet and dry mixtures and blend until you have a nice, smooth batter. If it’s too thick, just splosh in a little more Coconut Drink.
3. Next, heat up some coconut oil on a medium heat. Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter.
4. Serve topped with the Alpro Plain with Coconut and pomegranate seeds. Chia seeds, too, if you like. Breakfast, dessert, snack – make these any time you feel like a yummy plateful of plant-based goodness!"
