Gâteau Moelleux aux Myrtilles

Ingredients

  • 180g de biscuits (type "petit beurre" - possibilité de choisir des biscuits au blé complet)
  • 50g de margarine végétale
  • 800g de l'alternative au yaourt Alpro Nature Sans Sucres
  • 100ml d'huile végétale (ou de colza ou huile de pépin de raisin)
  • 4 œufs
  • 250g de myrtilles
  • 2 mandarines
  • 1 gousse de vanille
  • 1 citron vert

Preparation

  1. Pssst, tu veux savoir le secret de ce gâteau ? Il est crémeux sur le dessus, croquant en dessous et fruité à tous les niveaux. Ça donne envie, non ? Alors, pour commencer, préchauffe le four à 180°C et graisse tous les côtés de ton moule à gâteau. Emiette les biscuits et mélange-les avec la margarine. Répartis ensuite la mixture de manière égale sur le fond de ton plat, puis laisse refroidir jusqu'à utilisation.
  2. Mélange ton alternative végétale au yaourt Alpro Nature Sans Sucres avec le sucre de canne, l'huile et les jaunes d'oeufs jusqu'à ce que le tout soit homogène et crémeux. Puis, ajoute les graines de la gousse de vanille, le zeste du citron vert ainsi que 2 cuillères à café de jus de citron vert et mélange le tout. Si tu adores le citron vert ou la vanille , on te laisse en rajouter à ta guise !
  3. Bats les blancs en neige et incorpore-les délicatement au mélange, pour le rendre léger et mousseux. Dispose les mandarines et la moitié des myrtilles sur la base biscuitée. Verse ensuite le mélange sur cette couche et mets le résultat obtenu au four pendant 40-45 minutes jusqu'à ce que le dessus soit doré.
  4. Une fois refroidi, décore le gâteau avec le reste des myrtilles et une ou deux feuilles de menthe. Et dernière étape mais pas des moindres : recule, admire et GOÛTE. Alors, ça passe crème, non?

"1. Why wait for Pancake Day! Mix the buckwheat flour, salt and baking powder in a bowl. In another bowl, mash the banana and mix with the Alpro Plain with Coconut and the Coconut Drink . 
2. Combine the wet and dry mixtures and blend until you have a nice, smooth batter. If it’s too thick, just splosh in a little more Coconut Drink.
3. Next, heat up some coconut oil on a medium heat. Ladle around 3 tbsp of batter into the pan and cook for 3-4 minutes, flip over and cook for another 2 minutes. Carry on until you’ve used all your batter.
4. Serve topped with the Alpro Plain with Coconut and pomegranate seeds. Chia seeds, too, if you like. Breakfast, dessert, snack – make these any time you feel like a yummy plateful of plant-based goodness!"

An easy, crowd-pleasing cake made with versatile Alpro Soya Drink

"250g self-raising flour
70g vanilla sugar
190ml Alpro Soya Drink 
75ml sunflower/olive oil
40ml boiling water
1 vanilla pod or 1 tsp vanilla essence
3 tbsp flaked almonds
pinch of salt"

"1. A one-step cake that a breeze to make, tra-la! Preheat your oven to 180°C and oil an 8"" cake tin. 
2. In a mixing bowl, stir together the self-raising flour, vanilla sugar, seeds of the vanilla pod (or essence) and a pinch of salt. Add the Alpro Soya Drink, sunflower oil and boiling water and whisk the whole lot until smooth.
3. Pour the mixture into your tin, sprinkle over the flaked almonds and bake for 40-45 minutes until a lovely golden brown. Test by piercing with a wooden skewer – when it comes out clean, your cake is ready. 
4. Let the cake to cool. (We know, hard not to dive in straightaway!). Fab with coffee any time, or as a dessert with fresh fruit and a spoonful of Alpro creaminess."

350ml Alpro Oat Drink No Sugars
1 banana
1 tsp vanilla extract
Pinch salt
300g self raising flour
16g baking powder
1/2 tsp bicarb
250g fresh blueberries

To serve:
Fresh fruit and (optional) agave syrup 

1. Start with the pancake batter. Mash the banana in a bowl. Whisk in the Alpro Oat Drink No Sugars, vanilla extract and salt.
2. Sift the self raising flour, baking powder and bicarb into a separate, big bowl and tumble together. Pour the wet mixture over the dry stuff and whisk again until you have a lovely smooth batter.
4. Set it aside and let it stand for 20 minutes. Then gently stir in the blueberries – you don’t want blueberry mush!
5. Heat a drizzle of oil in a frying pan. Or pancake pan if you have one. Pour in about 2 tablespoons of batter and cook for 1-2 mins, until the base sets and bubbles pop out all over the top. Flip and cook the other side for a minute. Repeat until all your batter is used up.
6. Stack them up with the fresh fruit and a drizzle of agave syrup, if you like. Then watch them fly off the plate like hot... pancakes!
