Curry Thaï Vert aux Légumes

Un délicieux plat principal thaïlandais fait avec l'Alpro Nature Alternative Végétale au Yaourt

Ingredients

  • 1,5 l de bouillon de légumes
  • 300 gr de patate douce, pelée et coupée en cubes
  • 200 gr de légumes verts coupés (asperges, pois gourmands, brocolis par ex.)
  • 300 gr de champignons mélangés (si gros, coupés en morceaux)
  • 200 gr de pois sucrés (pois sucrés)
  • 500 ml d'Alpro Nature Alternative Végétale au Yaourt
  • 60 ml de pâte de curry vert (vegan)
  • 50 gr d'épinards frais
  • 1 cuillère à soupe d'huile
  • 1 piment rouge épépiné et coupé en petits cubes
  • Riz, en accompagnement

Preparation

  1. Portez le bouillon de légumes à ébullition dans une grande casserole. Ajoutez la patate douce et laissez mijoter jusqu’à ce qu’elle soit tendre. À l'aide d'une écumoire, retirez la patate douce du bouillon et mettez-la de côté pendant un moment. Faites cuire les légumes et les champignons dans le bouillon de légumes jusqu'à ce qu'ils soient cuits mais encore croquants.
  2. Mixez ensemble l’Alpro Nature Alternative Végétale au Yaourt avec la pâte de curry vert (au goût), les épinards et l'huile jusqu'à obtenir une pâte crémeuse et verte.
  3. Versez la pâte verte dans le bouillon et laissez mijoter (ne pas faire bouillir).
  4. Remettez tous les légumes cuits dans la sauce curry pour les réchauffer. Saupoudrez de piment et de coriandre fraîche. Servir avec le riz cuit. Fantastique, parfumé et 100% végétal.

Warm up with this wholesome, hearty stew made with Alpro Plain Soya alternative to Greek Style yogurt

"220g Alpro Plain Soya alternative to Greek Style yogurt
600ml water
900g vegetables: potato, pumpkin and sweet potato
200g spinach
2 onions
2 garlic cloves
4cm ginger, grated
½ red chilli pepper (optional)
500ml tomato passata
1 ½ tbsp garam masala or ras el hanout
1 tbsp curry powder
1 tsp turmeric
1 lime, juice
Fresh coriander
2 tbsp olive oil or coconut oil
Salt & pepper"

"1.	First peel the veggies and cut into equal sized chunks. Finely chop the onion and chilli; grate the ginger and crush the garlic.
2.	Next, heat the oil and fry onion, garlic, ginger and chilli until the onions are translucent. Add the spices and cook for 1-2 minutes, stir-frying to release all the wonderful aromas. Add all the veggies (except the spinach), tomato passata, water and coriander.
3.	Let it simmer for 20-30 minutes on a low heat, stirring frequently until the potatoes are soft. Now add the spinach and Alpro Plain Soya alternative to Greek Style yogurt and simmer for a further 2 minutes just to wilt the spinach.
4.	Season with salt and a little lime juice. Serve steaming hot, sprinkled with a few extra fresh coriander leaves if you like. A super-sustaining, one pot meal in a bowl!"

Quicker than a takeaway and made with Alpro Plain No Sugars plant-based alternative to yogurt
"For the curry:
1 medium size sweet potato, peeled and cut into 2cm chunks
2 tbsp rapeseed or sunflower oil, plus extra if needed
2 medium size onions, finely diced
3 garlic cloves, crushed
10g fresh root ginger, peeled and finely grated
1 tsp sweet paprika
2 tsps ground turmeric
1 tsp medium curry powder
¼ tsp hot chilli powder
1 tsp ground coriander
1 tsp garam masala
4 green cardamom pods, crushed
227g can chopped tomatoes
1 tbsp tomato purée
½ green pepper, deseeded and cut into 1cm pieces
1 green chilli, finely diced
250ml vegetable stock
2 fresh tomatoes, quartered
1 tsp salt,
400g can chick peas, drained and rinsed

For the garam masala raita:
150g Alpro Plain No Sugars plant-based alternative to yogurt
1 tsp garam masala
½ tbsp dried mint

Rice to serve"
"1. Start with a bit of roasting. Preheat the oven to 190C/170 fan/gas mark 5 and line a baking tray with baking parchment. Toss the sweet potato with 1 tbsp oil and spread out on the tray, then bake for 20-25 minutes until soft and slightly browned along the edges.
2. While that’s happening, add the rest of the oil to a medium saucepan and warm over a low-medium heat. Fry the onions, garlic and ginger for 8-10 minutes, or until very soft. Stir in the paprika, turmeric, curry powder, chilli powder, coriander, garam masala and crushed cardamom pods to make a nice thick curry paste. Cook for 1-2 minutes, adding a little extra oil if it gets dry.
3. Pour in the canned tomatoes, stir in the tomato purée and cook for 2-3 minutes to thicken up again. Mix in the vegetable stock, green pepper, green chilli, fresh tomatoes and salt, then siimmer gently on a low heat for 35-45 minutes. Finally add the chickpeas and roast sweet potato and heat until they’re warmed through.
4. To make the garam masala raita, just mix all the ingredients together and season to taste. Serve on the side with the curry and rice for a touch of tangy contrast."
