Weetabix Breakfast Muffins

Ingredients

Serves 10

  • 3 Weetabix biscuits
  • 100g sultanas
  • 100g soft brown sugar
  • 100g plain flour
  • 100g wholemeal flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 flax egg (1tbsp flaxseeds with 2 tbsp water)
  • 225g Alpro Greek Style alternative to yogurt
  • 75ml Alpro Soya No Sugars drink
  • 50ml vegetable oil
  • 50g agave syrup
  • Zest of 1 orange

Preparation

  • Step 1

    Heat the oven to 200 c/ 180 C fan/ Gas 6. Prepare a muffin tray with ten paper cases

  • Step 2

    Crumble the Weetabix into a bowl and add the sultanas and brown sugar. Sift in the flour, baking powder, cinnamon and mix together.

  • Step 3

    In a separate bowl beat the flax egg, Alpro alternatives to milk and yogurt, the oil, syrup and orange zest.

  • Step 4

    Add the wet ingredients into the dry ingredients and mix well. Spoon into the paper cases, filling to the top. Bake in the oven for 20-25 mins until well risen. Cool on a wire rack
